Trata-se de uma iguaria composta por uma miríade de vegetais, carnes e enchidos cozidos.A sua origem é controversa. Há quem defenda ser de origem judaica pois no Sabat os judeus não podem, dentre outras coisas, acender fogo e cozinhar. Então cozinhavam na véspera carnes e vegetais, que seriam consumidos após o pôr-do-sol do dia do descanso. Mais provável será a teoria de ser um prato dos pobres que levava os vegetais e os restos e ocasionalmente um pedaço de carne com osso e que, com o tempo e dias mais fartos  se foi enriquecendo com enchidos e peças mais nobres.&lt;br /&gt; &lt;br /&gt;No que diz respeito aos vegetais, podem ser cozidos feijões, batatas, cenouras, nabos, couves e arroz. Nas carnes, é possível ter o frango, entrecosto de porco, entremeada de porco, orelha de porco, chispe de porco e carne de bovino de diversas partes. Nos enchidos, são típicos o chouriço de carne, a farinheira, a morcela e o chouriço de sangue. Régua e Pinhão são os principais centros de produção, mas algumas das melhores vinhas ficam na zona mais a leste.&lt;br /&gt;&lt;br /&gt;Apesar de produzida com uvas do Douro e armazenada nas caves de Vila Nova de Gaia, esta bebida alcoólica ficou conhecida como "Vinho do Porto" a partir da segunda metade do século XVII por ser exportada para todo o mundo a partir desta cidade.&lt;br /&gt;&lt;br /&gt;A "descoberta" do Vinho do Porto é polémica. Uma das versões, defendida pelos produtores da Inglaterra, refere que a origem data do século XVII, quando os mercadores britânicos adicionaram brandy ao vinho da região do Douro para evitar que ele azedasse. Mas o processo que caracteriza a obtenção do precioso néctar era já conhecido bem antes do início do comércio com os ingleses. Já na época dos Descobrimentos o vinho era armazenado desta forma para se conservar um máximo de tempo durante as viagens. A diferença fundamental reside na zona de produção e nas castas utilizadas, hoje protegidas. A empresa Croft foi das primeiras a exportar vinho do Porto, seguida por outras empresas inglesas e escocesas.&lt;br /&gt;&lt;br /&gt;O que torna o vinho do Porto diferente dos restantes vinhos, além do clima único, é o facto de a fermentação do vinho não ser completa, sendo parada numa fase inicial (dois ou três dias depois do início), através da adição de uma aguardente vínica neutra (com cerca de 77º de álcool). Ou ainda Imperiais à Lebrinha sem ser nesse mítico restaurante onde se bebe a melhor imperial da Península Ibérica( sim, nós não somos invejosos e damos os créditos a quem bem os merece).&lt;br /&gt;Com a Francesinha é o mesmo. O molho é só um e não se pode, suprema heresia, adaptá-lo ao marketing e vender a alma de um património.&lt;br /&gt;&lt;br /&gt;Quer uma Francesinha como deve ser ? Então é com tudo a que tem direito, desde o molho secreto, os ingredientes frescos e o bem saber de a colocar na mesa no ponto  de equilibrio exacto do pão e do molho..&lt;br /&gt;&lt;br /&gt;Pode pedir a Francesinha com molho á parte, se bem que não seja Francesinha..Agora..retirar o leve picante do molho é que não.O molho não deve ser picante de forma a tirar as notas de sabor da Francesinha e muito menos deverá ser insípido e sem travo que nos deixe uma recordação na boca.&lt;br /&gt;&lt;br /&gt;Se calhar pensa que escrevemos muitas vezes a palavra Francesinha. Depois de ter sido copeiro dos marqueses de Niza, foi dono de vários cafés na capital e empresário do teatro de S. Carlos. Além do café situado junto a este teatro, abriu outros três – no Cais do Sodré, no Chiado (conhecido como o “Marrare do Polimento”) e na Rua do Arco do Bandeira ou dos Sapateiros, na esquina com a rua de Santa Justa.  Foi neste último, fundado em 1804 e também chamado Marrare das Sete Portas, que nasceu o célebre bife lisboeta que tomou o seu nome.&lt;br /&gt; &lt;br /&gt;Ora os nossos bifes são honestos, suculentos, bem passado, médio ou mal passado, ou como diz um conterraneo nosso, a vir para a mesa ainda a "mugir". Facto é que desde o século XVII que a criação de suínos se tornou excedentária em terras da Bairrada e esse facto constituiu um grande impulso que o levou à sua comercialização.&lt;br /&gt;&lt;br /&gt;O documento mais antigo que se refere a esta iguaria é uma receita conventual de 1743, provavelmente do Mosteiro do Lorvão ou do Mosteiro da Vacariça, compilada num caderno de refeitório de 1900 por António de Macedo Mengo, na qual é descrita uma receita que quase coincide com a receita actual.&lt;br /&gt;&lt;br /&gt;Devido a esta falta de documentação mais exacta, todos os concelhos da região da Bairrada reivindicam a sua origem, desde o concelho da Mealhada, a Sul até ao de Águeda, a Norte, não sendo consensual e gerando várias disputas.&lt;br /&gt;&lt;br /&gt;No Dom Tacho, o Leitão não é à Bairrada. Generalizou-se o uso da expressão Imperial para denominar cerveja de pressão em copo pequeno. A mesma perde-se na bruma dos tempos.&lt;br /&gt;Citando o Ciberdúvidas da Lingua Portuguesa, pensa-se que seja uma evolução do francês Bistec ou do Inglês Beefsteak.&lt;br /&gt;&lt;br /&gt;Fala-se no norte de um Galego chamado Bitoque que os preparava com mestria e  com as aparas dos bitoques deu origem ao "prego".Mas essa parece-nos uma justificação fantasiosa.&lt;br /&gt;&lt;br /&gt;Há ainda quem refira ser o Bitoque nada mais do que a alcunha de um criado do Zé dos Patacos, antiga casa de pasto situada onde é hoje a Praça do  Chile em Lisboa,onde iam personagens célebres como Eça de Queirós e Fialho de Almeida,  famoso por ser bronco e que o nome do bife teria sido em honra da sua alcunha.&lt;br /&gt;&lt;br /&gt;A nós parece-nos mesmo ser uma derivação do bistec.&lt;br /&gt;Mas já tivemos muita conversa.Quando vier ao Dom  Tacho vamos mostrar-lhe como se faz um bom bitoque, com molho sápido e espesso, um ovo de galinha honesta a cavalo, belas batatas e todos os mastigantes como se dizia no antigamente. Já tem água na boca ? Sim, senhor! A classificação de "fino" começou quando o Toninho exigia que lhe servissem em copo de vidro fino, como ele apreciava. Exigia-se de início: "Um copo de cerveja de vidro fino!". Depois pedia-se "Um copo fino".
